The team at MIŠKE is taking a big step forward by adding dishes to our menu that are firendly to our microbiome and the smooth bowel functioning. This will mean new side dishes, certain cooking methods and, most importantly, a variety of choices for you.

The secret this time is not complicated recipes, but the fundamental principles of a healthier diet, combinations of different ingredients for the well-being of the whole body and nourishing our microbiome.

The human microbiome is the totality of the micro-organisms in our body, most of which are found in the intestines. Micro-organisms not only strengthen our immune system and protect us from infections. They also digest food, synthesise enzymes and produce various metabolites. Each person's microbiome is unique – like a fingerprint.

According to the MIŠKE restaurant chef, there are no inherently good or bad ingredients; what truly matters are their harmonious combinations and the chef's creative flair.

At MIŠKE, the chef is like a painter, where the work on an abstract picture is all about mixing the paints on the palette to get the colours and shades he wants.

For example, “pure” (unprocessed) garlic is not considered a “good” and healthy product for our microbiomes, but it fits perfectly as an ingredient in various oils.

What surprised restaurant chef most in the creation of the menu was that artichokes and almost all types of mushrooms, which we all welcome in spring, are high in 'bad' carbohydrates. No problem – they can always be substituted with other combinations of vegetables, and the various stews are particularly valuable.
